Arrocco

Working with noble rot also means accepting that, every year, certain lots of wine, despite our maximum efforts, have not achieved the richness and complexity which Scaccomato demands. These lots, already identified at the end of the harvest period or during the phase of aging, are used for the production of ARROCCO.  Unlike Scaccomatto, however, to guarantee a certain continuity of production, this wine is also produced with a small percentage of grapes dried in small packing cases for several months to increase their sugar content.

GRAPES: Albana, harvested with successive passages through the vineyard to select the grapes with noble rot plus a small percentage of grapes dried for several months in small packing cases.

FERMENTATION: partly in 60 gallon French oak barrels used once previously and partly in small, 150-200 liter, stainless steel tanks

AGING: partly in 60 gallon French oak barrels and partly in small stainless steel tanks AVERAGE PRODUCTION: 5000 bottiglie da 500 ml  e 200 magnum
