Torre di Ceparano

All of the lots of Sangiovese  which demonstrate during their aging period that they are not of the proper level for top wines such as Pietramora and Marzieno are used for Torre di Ceparano, and for this reason it can be considered the “second wine” of the estate. During more recent vintages, as new vineyards of Cabernet Sauvignon, Merlot, and Syrah have begun to produce, some of the grapes from these parcels are utilized, with a maximum total of 15%, in the final blend of Torre di Ceparano. The selection in the vineyard and the care and attention during the aging are similar to those of the top wines, and the results achieved in vintages such as 1995, 1998, 2001, and 2004 demonstrate this fact.

GRAPES: Sangiovese (85-90%), Syrah 5-10%, Merlot (5-10%), Cabernet Sauvignon (maximum 5%), Ancellotta (maximum 2-3%)
FERMENTATION: in medium-sized stainless steel tanks with 15-21 days of skin contact.
AGING: in 60 gallon French oak barrels (10% of which are new) plus a small percentage of American oak.
